Maryland White Potato Pie
A soul-food favorite and a Chesapeake tradition dating back to colonial days, Maryland White Potato Pie is a bright and beautiful take on the simple potato with a healthy helping of sweetness and a ripping citrus zest.

Ingredients
☐ 2 large potatoes, cooked, peeled and mashed
☐ 2/3 cup unsalted butter
☐ 1 cup sugar
☐ ½ tsp baking powder
☐ ½ tsp salt
☐ ½ cup heavy whipping cream
☐ ½ cup milk
☐ 4 eggs, beaten
☐ 4 lemons for juice and zest
☐ 2 lemons, sliced for garnish (optional)
☐ 1 ½ tsp vanilla extract
☐ ¼ tsp nutmeg
☐ 1 9-inch pie crust using your favorite recipe, or frozen
Step 1: Combine the potatoes, butter, sugar, baking powder and salt in medium bowl and mix well.
Step 2: Slowly add whipping cream and milk stirring as you go until you’ve got a smooth and even consistency.
Step 3: Add lemon juice, zest from two lemons, vanilla extract, nutmeg, and eggs. Mix well.
Step 4: Pour into crust and bake at 350° for 55 minutes. For a beautiful pie, top with thinly sliced lemon circles around the edge of the pie or, halve the circles and twist each into a bow, placing one for each slice with another slice in the middle. Your pie will look like a Maryland sunrise!
